I have vivid memories of a fabulous chicken dish that tasted something like this at Ka Jok See Restaurant in Phuket Town. Lek, the owner, reckons the secret to the sauce is the addition of his preferred tipple: blue-label Johnnie Walker single-malt whisky. Whatever, it is finger-licking good – and not a colonel in sight!

  • 40 ml sunflower oil
  • 1 teaspoon sea salt
  • ½ teaspoon</

Method

Preheat the oven to 200°C. Season the sunflower oil with salt, pepper and ground chilli, then rub the spiced oil all over the chicken breasts. Place the chicken on a baking tray, skin-side up, and roast
