In Phuket, they sell and serve their colourful native lobsters fished from the Andaman Sea, and this is my interpretation of the popular southern-style ‘Three flavour sauce’ – the very first taste memory I have of Thailand. I call this the holy trinity of flavours, combining the heat of chilli with the sweetness of palm sugar and the sourness of tamarind – a perfect combination for the lobster meat.
