I have long been a fan of laksa, a rich soup made famous by the Nonya cooking of Singapore and Malaysia, and this recipe has been a part of my repertoire ever since I first tasted it, even though I tweak it every now and then for a subtle difference. To make it vegetarian-friendly, replace the prawn stock with a spiced vegetable stock and double the amount of bean curd.
