I make this when I want something quite simple to serve with steamed rice for a casual lunch. It takes no time to cook and rewards with its lingering flavour. Water spinach is a staple leafy green in Bali and is also known as water convolvulus, kangkung or swamp cabbage. It shrinks within seconds of being heated, so requires minimal cooking, and quickly takes on the flavours it is cooked with.
