I have used the flavour spectrum of India to make this refreshing salad that relies as much on texture as it does flavour. Puffed rice is one of the ingredients in bhel puri, the ubiquitous savoury tiffin snack found on every street corner in Mumbai. If you can get hold of any puri crisps (from an Indian restaurant or grocer), add them to the salad for extra crunch. The dressing can be made ahead of time and kept refrigerated.
