If you can find tiny squid (known as chipperones in Spain), use them whole – they are sensational. You will probably have to do some searching around, as they are usually thrown back to sea because of their size. I have managed to get them on the Costa Centrale (as we euphemistically call the area north of Sydney where our beach house is) straight from a fisherman who thought I was bonkers for wanting to cook ‘bait’. But there you go – it is possible if you are persistent enough. Cuttlefish
