This tortilla first appeared on the ‘Seduced by Spain’ menu I presented at Sydney’s Coast restaurant in 2001.

Ingredients

  • 150 g chorizo sausage, finely sliced
  • olive oil, for pan-frying
  • 2 large eggs

Method

Preheat the oven to 175°C and oil a gratin dish or clay cazuela dish.

Heat a frying pan and fry the sausage slices in a little oil for about 2 minutes
