Tortilla is a Spanish staple, served in every tapas bar from breakfast right through the day. Try a slice of warm tortilla one morning with a glass of sherry and a few slices of ham, and suddenly you’ll feel like you’re in Spain. During her time there, Kylie mastered the art of the perfect tortilla. This is her recipe.

Ingredients

  • 125 ml olive oil
  • 1 small onion, finely diced
  • 2 large potatoes, sliced

Method

Heat the oil in a cast-iron frying pan and fry the onion until softened. Add the potato slices and fry for a few minutes until softened. Remove the potatoes and onion from the pan and discard any excess oil.

Lightly beat the eggs in a bowl with the salt, pepper and chilli.

Put the potatoes and onion back in the pan and pour the beaten egg over the top. Cook over moderate heat un
