A light and cleansing dessert starring fromage blanc, a fresh curd cheese that is common throughout Europe. In Australia, a couple of excellent ones are made in Victoria by Richard Thomas (which can be eaten directly from its tub with a spoon) and Meredith Dairy. It’s a perfect partner for the toffee apples and the fresh acidity of the green apple snow.
