In the spirit of the occasion, I am passing on a morsel of Bill Devin’s wisdom and giving you his recipe for that famous Catalan sauce. It is perfect for the Australian climate and has a multitude of uses: serve it with grilled or barbequed fish, chilled shellfish and seafood, chicken or lamb, roasted Mediterranean vegetables, as a dressing for bitter greens or as a salsa for crusty bread.
