Taking my inspiration from escalivada (a classic Catalan grilled vegetable salad), I have used the same elements and combined them with raw or smoked fish. In particular, I love to use the flavoursome Woodbridge smoked ocean trout from Tasmania. The fish are sourced from the pristine waters of Macquarie Harbour and smoked over cuttings from the apple trees on the Woodbridge property. The smoky flavours meld perfectly in this delicious combination.
