I have had dinner a few times at the very stylish Riad Tamsna on a roof terrace in the depths of the Marrakech medina, sitting on big cushions under the stars with soft candlelight glowing from the low tables. One of their signature dishes is poulet yassa, and after tasting it on my first visit, I became completely hooked. This is my attempt to recreate it.
