This is one of my favourite eggplant dishes, and makes a regular appearance on Sunday nights when friends drop in for an informal dinner. I serve it with several other dishes but its always the first one to disappear. It goes well with all manner of things, from a simple grilled or roasted chicken, chermoula-baked fish or roast lamb, but as far as I’m concerned, its unbeatable just on its own.
