This is my all-time favourite Moroccan dessert, with the classic flavour combination of almonds, cinnamon and orange blossom, and the raspberries giving it a lavish appearance. The recipe serves six people (I have found it too hard to reduce it down any further) so even if you are only cooking for four, make it as it is and enjoy the leftovers . . . if there are any!
