These pastry parcels are packed with flavour and need absolutely no adornment. They make the most delicious canapes, and can also be made a fraction larger and served as a starter with a small salad of crisp bitter greens and a pomegranate dressing. The tendons create a contrasting texture to the meat, and the trotter’s role is to provide a natural gel for the sauce, which holds the whole thing together when cooked.
