This salad is inspired by one of my favourite condiments – ajvar, an ancient Arabic relish that is common in southern Turkey and across the Middle East. I have also seen it used in Croatian and Serbian cooking, and Eastern European delis in Australia sell it in jars. I remember buying jars of this exotic relish long before I’d set foot in any of these countries and tasted it first hand. Everything has a way of naturally falling into place.
