Tarik and Savas, the owners of Changa in Istanbul, kindly sent me this recipe after I raved about it at the first dinner I ate at their restaurant. I order it every time I visit and its taste never diminishes or becomes boring. They serve it with crisp grissini-style breadsticks, but it also makes an ideal accompaniment to grilled lamb and meat kebabs.
