This was one of my favourite lunch salads when staying at Bodrum, on Turkey’s Aegean Coast, one summer. Purslane grows wild in these parts and it gives such a great texture to the salad. If you are unable to source any, you can use watercress sprigs instead, but do try and persuade your greengrocer to start stocking it. The other secret ingredient is wonderfully thick and flavoursome yoghurt. There are some lovely yoghurts now being made by small producers in Australia that have the right c
