This is a dessert from one of our first menus in London, inspired by my passion for decent gingerbread and the crates of cumquats I saw at the shops across the road in Soho’s Chinatown. The magic happened when we combined these flavours and introduced another texture: the sweet acidity of the yoghurt meringue. You can always substitute candied orange or clementine if you don’t have any candied cumquats to hand.
