Like the classic ‘fool’ (simply whipped flavoured cream), this is an easy dessert to prepare, with a sense of elegance to it. Enjoy it during summer when raspberries are at their peak. To make it a little more lavish, I have stirred tiny meringue dots and rose-flavoured Turkish delight through the mousse before it is refrigerated, adding an unexpected crunch to the texture.
