Mix the green mango with the mint, lime leaf, cress and chilli dressing. Leave to marinate while the oysters are smoked.
Lay the oysters in their shell in a steamer tray. Line a wok with foil and sit over a high heat. Add the tea-smoking mix and as it starts to smoke, sit the steamer tray over the wok and cover with a tight-fitting lid. Smoke for 3 minutes – just enough to warm the oyst
