Mozzarella made with buffalo milk is packed with flavour, aroma and character – truly an ingredient that needs little messing with. Victoria’s Shaw River mozzarella is a premium product that bears little resemblance to the mass-produced, plastic-wrapped cow’s milk mozzarella that is found in every supermarket. To complement the essential characteristics of the cheese, I opt for a robust, peppery green extra virgin olive oil – Joseph’s First Run or a luscious Sicilian oil like Ravida would b
