Bottarga is the smoked roe of mullet, and is something of a delicacy in many parts of Italy. When combined with sea urchin roe, it gives the hot pasta a distinct and luscious taste of the sea. Bottarga is available from some fishmongers, fish markets and select food specialists. It needs to be shaved very finely on a sharp mandoline to get tissue-thin shavings that simply melt into the hot pasta.
