An Italian version of parfait, semifreddo is a frozen confection that requires no churning, making it an ideal dessert to prepare at home. Hazelnut and chocolate are made to go to bed together and the crunchy croquant effect created with the honeycomb and praline elevates it to a perfect menage a trois. Pectin powder, commonly used when making jams and preserves, is available from supermarkets, health-food stores and specialty food stores.
