Ceviche is such a wonderfully refreshing dish. It’s honestly a sunset on a plate. Citrus, mild fish, and spicy chipotle oil drizzled onto a warm chip is a vacation in a bite.
I like to serve my ceviche on fried tortillas, which are the prefect crunchy vessel for the tender scallops. You get a little bit of everything in each bite.
