I can’t get enough of these baked mussels. They can be made ahead of time and popped in the oven when you’re ready to eat, and they’re great for entertaining, or even on a Wednesday afternoon. They are that good! The chipotle butter has the perfect kick of spice to go with the sweetness of the mussels, and the crunchy breadcrumbs will have you coming back for more.
I bake these little gems on crumpled aluminum foil on a baking sheet to keep the mussels from tipping. I like to serve
