My mom loves buttery clams swimming in a divine sauce of wine, garlic, and butter. This addiction started with her visits to a Spanish tapas bar where I was working when I was a young cook. Since then, whenever I get the chance I go to our local fish market to buy a few pounds of fresh clams and a loaf of crispy bread for us to enjoy. This is the only time in our life when the room is quiet.
