It had been years since I’d had runny poached eggs with fatty hollandaise sauce perched on top of a toasted English muffin. Reason being is because we don’t eat gluten at home, but one day I decided to bake a cauliflower thin in a muffin tin and the idea for this recipe was born!

Ingredients

  • 4 Crepini® Egg Wraps
  • 4 whole pasture-raised organic eggs and 2 egg yolks at room temperature

Method

To make the crepe shells, preheat oven to 300°F and set the oven rack in the middle. Since the Crepini® crepes are so big at Costco, you will need to cut them a bit smaller to fit in a large muffin tin or try to find the smaller Crepini® at Walmart, Publix, or their website. Pus
