This is my favorite way to cook chicken—with the skin on and the bone removed. The skin gets crispy and adds extra fat so the meat won’t dry out. Served with a zesty little pan sauce and tender asparagus, this is clean keto eating with serious crunch and flavor.

Ingredients

  • 4 skin-on, boneless organic chicken thighs
  • Juice of ½ lemon

Method

Buy some good quality organic bone-in chicken thighs and ask the butcher at the meat counter to remove the bone for you. They would be happy to do it, and make sure to save the bones in your freezer to make stock and bone broth.

To make the chicken thighs, first let them come to room temperature for 20 minutes and then season with a generous pinch of salt and pepper on both sides
