If you don’t have a smoker or a secret spice rub, but still want some smokehouse-quality ribs, I’ve got you covered. Cooking these ribs low and slow in the oven sealed in a pouch with beer, store-bought spice rub, and ground coffee yields tender meat that falls off the bone with big-time flavor.


  • 1 rack of pasture-raised baby back or spare ribs

To make the spice rub, mix together 1 tablespoon of store-bought spice rub with 2 teaspoons of finely ground coffee. Season the ribs on both sides with the spice rub and let marinate in the fridge
