This is officially Dessi’s favorite recipe in this chapter! You will be blown away at the power of good parmesan cheese and reserved pasta water. They make the creamiest sauce ever. Combine that with earthy wild mushrooms, kale, and one the best gluten-free pastas I’ve ever eaten. Mangia!


  • 8 ounces gluten-free egg tagliatelle

Bring a large pot of water to a boil for the pasta. Use more water than you think, about 1 gallon, because the pasta is quite starchy, and you will need the leftover pasta water for later.

While the water is heating, preheat a large nonstick pan just below medium-high heat
