This is my version of risotto! I replaced starchy, nutrient-dead white rice with one of the coolest things at Trader Joe’s. Risoni is made from organic lentils and chickpeas, is loaded with protein and fiber, and tastes even better than rice! Just a few ingredients and my BFF bone broth make this risotto so darn tasty.

Ingredients

  • Mirepoix
  • 10½-ounce box of risoni
  • 25 to 30 ounces of bone broth
