This is my take on a classic using best-in-class ingredients. It’s really fun to watch the sauce come together with just pasta water, eggs, and cheese. Combine that with one of the best-quality and nutrient-dense pastas from the store, and you are good to go!

Ingredients

  • 3 slices organic or pasture-raised bacon
  • 8 ounces gluten-free spaghetti

Method

Chop the bacon into small pieces and place in a large nonstick pan. Set the pan over medium heat and cook until the bacon is crispy. Remove the bacon but leave all the fat in the pan.

Boil the pasta in heavily salted water according to the package instructions. If using the red lentil spaghetti like the one I used for this recipe, boil for 18 minutes to really soften it up
