I don’t drink often, but when I do, I love good tequila, which is why I used top shelf anejo tequila and a monk fruit-based simple syrup to make two darn tasty margaritas that are keto and diabetic friendly!
Make the simple syrup by combining the monk fruit sweetener with ½ cup of filtered water in a small pot. Cook over medium heat until the sugar dissolves, about 6 minutes. Set aside and let cool or add ice cubes if in a hurry. If the syrup begins to crystalize after a while or in the fridge, just warm it up on the burner.
