This is serious, clean eating, Tex-Mex comfort food! Tender pulled pork, crispy tortillas, paleo BBQ sauce, and a roasted tomatillo avocado salsa all made with only five ingredients. Dios mio!

Ingredients

  • 2 pounds pasture-raised pork shoulder, boneless
  • cup no-added-sugar BBQ sauce

Method

To cook the pork shoulder, cut it into 4 equal pieces roughly the size of your fist. Season the pork pieces all over with a pinch of salt and pepper. Preheat an electric or stove-top pressure cooker to high along with 2 tablespoons of avocado oil. Sear the pork on all sides until d
