Who makes meatballs out of scallops? This guy! Trust me, the sweet and briny flavor of the scallops infuse into the broth and give it a seafood bisque-like flavor. You can also do this with shrimp, and the soup gets even better the second day!

Ingredients

  • Mirepoix
  • ¼ cup red curry paste
  • 1 can full-fat coconut milk

Method

Preheat a large soup pot over medium heat with 2 tablespoons of ghee. Add the mirepoix along with ½ teaspoon of salt and a few cracks of pepper. Cook for 15 minutes
