Maybe we should have called this every day Swiss chard, because at our house we eat simple steamed greens—chard, spinach, mustard greens, kale, or escarole—with nearly all our meals. Feta and a shake of sumac lift the flavor without masking the essential earthiness of garden-fresh leafy vegetables, and this is equally good hot or at room temperature. Substitute any greens you like best for the chard, and make this your go-to vegetable side.
