When the summer squash is coming in fast and furious, this is a great way to use the overflow and a lot more interesting than the usual grilled squash slabs. But don’t limit it to summer spreads; I find it’s just as good made in the broiler, and it adds a bit of zip to heavier winter meals. Cousa is a pale green squash that resembles a stripy zucchini; zucchini is a fine substitute as long as you choose young specimens with relatively few seeds.
