You may have spotted small yellow buckshot-like grains of millet in a loaf of whole-grain “health” bread, but it doesn’t appear on the dinner table all that often, which is a shame. Cooked like rice, the tiny round grains bloom into a terrific simple side dish or salad grain. Toasting the millet gives it great flavor and helps keeps the grains fluffy and light.
