On Easter Sunday my family and I host an open house for brunch, with at least forty people coming to celebrate the holiday in our home. Along with the usual platters of eggs and a gigantic applewood-smoked ham, I like to offer at least one dish that serves as a vegetarian main course, and this platter of lemony potatoes topped with creamy cheese fits the bill perfectly.
