Mint is most often used in savory preparations, but I think a whisper of spearmint flavor lightens a rich dessert like this mousse and gives it a festive feel. In the summer I serve this just barely frozen for a refreshing end to a more formal meal; in the winter, I prefer it chilled with a garnish of fresh mint. Either way it’s a convenient make-ahead dessert that is always a hit.
