Delicata is a mild-flavored squash with attractive striped skin that is completely edible when cooked. Because it is on the bland side all on its own, I like to turn up the volume a bit by seasoning it aggressively and roasting it to concentrate the flavors. Pumpkin seeds add some welcome crunch, and a drizzle of roasted squash seed oil (try the one made by Stony Brook WholeHeartedFoods) really seals the deal but is entirely optional.
