Chewy Ginger Spice Cookies

I can’t think of a better way to illustrate the convenience of Middle Eastern spice blends than with these very adult ginger cookies. Ras el hanout, bolstered by some additional ground ginger, does the job of a half dozen individual spices, making for an incredibly complex—and not too snappy—gingersnap with far less fuss. Small nuggets of candied ginger and a crust of raw sugar add wonderful texture.
