My grandmother made this frequently, and I absolutely love it. Drying the peppers takes some forethought but virtually no effort, and it results in a wonderfully hearty dip that also happens to be vegan, so it’s a nice alternative to cheese- or dairy-based dips. I like to keep it on the rustic, chunky side to eat with crudités, like endive spears.
