Kale Slaw with Grapes and Pistachios

I never get tired of thinking up new ways to use kale, which is fortunate, because there seems to be some in my CSA box every week during the summer! Happily, our customers have benefited from all my experimentation and seem to enjoy these substantial salads as much as I do. This sweet-tangy version with lots of snap and crunch has become one of our best sellers, year-round.
