Farro has a chewy texture and hearty flavor that makes it a great partner for dried fruit. It’s a nice cold-weather accompaniment to a rich braise or roast chicken. I’ve specified quick-cooking farro, which is parboiled to reduce its cooking time, but regular farro is absolutely fine; just increase the cooking time by about 20 minutes, checking after 40 minutes to see if the grains are tender.
