Compound butters are just about the easiest way I can think of to jazz up a week-night meal, especially because they can be made ahead and stashed in the freezer until needed. I always have two or three different flavors on hand, ready to enhance a piece of grilled fish, veggies, or a steak. A fruity version like this one, made with a touch of curry powder, does wonders for your basic Tuesday night pork chops!
