This light and refreshing gazpacho is a perfect blend of sweet and savoury, making it very appealing for people of all ages, especially kids. My two have become big fans, especially when they can dunk some oily focaccia or ciabatta bread in to soak up the soup.
It’s quick to make, as there’s no cooking, everything just gets blended together and served cold. It can be prepared ahead of time too, then kept chilled in the fridge for 2–3 days.
