Pho is a Vietnamese soup consisting of broth, noodles and a variety of toppings. It’s proper feel-good food leaving you full and satisfied, yet revived and refreshed. This is a very simplified version that is do-able midweek, and ideal for those in-and-out days. Once you have the aromatic broth made, you can heat up individual portions when required, then finish it off in the bowls with seasonings, noodles and your chosen toppings.
