These sunshine yellow coconut pancakes are naturally gluten- and dairy-free. Once you get the hang of making them they are very easy – it’s often the first one or two that are never perfect, but that’s the same for any pancake. The cook gets to eat those while cooking the rest! You need to keep the heat high to get the underside sizzling and crisp, before adding the filling and folding in half.
